Chocolate and its Chemistry: why we fall in love with it
Professor Paul Walton, Department of Chemistry at University of Yorks
What would we find out about chocolate if we could see its molecules? Does a molecular view allow us to understand the reason why it tastes so good? Can we say whether it acts as an aphrodisiac? Is it good for your health? Can it be improved? All of these questions and more will be discussed at this Cafe Scientifique.
Professor Walton heads a research lab which focuses, amongst other things, on cellulose degradation for biofuels and anti-cancer agents. He is a recipient of the Royal Societys Higher Education Teaching Award and has chaired the editorial board of the Dalton Transactions Journal.
Cafe Scientifique
